I full on ripped this one off from A Year of Slow Cooking, which continues to awe me with the magic that one can create in a slow cooker. I'm not going to lie, I think I'm in love with her.
Aight, let's do this people.
Asian Peanut Butter Pork
Ingredients
1.5-2 lbs pork tenderloin
(I used pork loin chops because I had them in the freezer)

1 onion, sliced
1/4 cup soy sauce
1/4 cup brown sugar
3 tablespoons white wine vinegar
3 tablespoons water
2 garlic cloves, chopped
(or you can use the pre-minced stuff if you're like lazy me)
1/2 cup creamy natural peanut butter
2 tablespoons chopped peanuts (garnish; optional)
1 lime, cut in wedges (garnish; optional)
White rice
Toss the sliced onion into the bottom of the pot.
Put the pork on top of the onions (mine was still frozen)
Let your puppy lick the spoon
while you try not to get peanut butter on your new camera.

Switch the dial to low and go back to work. Or to yoga. Or for a drive on the beach. Come back in 7 hours.
Flip the meat for the last hour, in her words, "to allow the other side to soak up the peanutbuttery goodness" I couldn't have said it better myself.
Mix it up and pull the meat apart if that's the look you're going for. I obviously was. Scoop it out, and throw it on top of some cooked white rice. Toss some chopped peanuts on the top, and squeeze the lime juice over it if you'd like.
Mmmmmmmmm deliciousness. I never eat pork and this one totally won me over.

Oh yeah, we're going to be really good friends because I love my crock pot too! I should've said that in my post, but the Beef Stew I posted you can do the same way, but use a crock-pot instead of on the stove. That's the way I usually make it. I put it on low from 10/11 a.m. until 5/6 p.m. Nummy! Yours looks scrumptious. Now you know I'm copying that one for sure! Thanks! Hope to see you next week too. Following you & have a good one!
