So what did I do when I got home and was missing her?
Spicy Italian Beef
Ingredients
1-2 lbs beef roast, sirloin tip or rump roast
(I used frozen sirloin tip)Half of a 12 ounce jar of Italian Giardiniera, drained
(less if you want it less spicy)
Half of a 12 ounce jar pepperoncini peppers
1 envelope Zesty Italian salad dressing
10 ounce can condensed beef broth
10 ounces of water
10 ounces of water
I modified her recipe slightly because I'm a one pot wonder kind of a person. So I just threw it all in instead of pre-mixing.
Place the beef in the crockpot
Pour the dry salad dressing on top
Drain and add the pepperoncinis and the Giardiniera (anyone have any idea how to actually pronounce this word?!)
Turn the pot to low and then do whatever. Hang out with your BFFs. Get your hair done. Do some dress shopping. Have a cocktail. Just come back in about 10 hours (this one's great for the working girls because it shouldn't burn after 6-8)
K's recipe says to shred the beef. All I had to do was stir it and it basically fell apart into spicy shredded deliciousness.
Throw it over some rice (because that's what we do) or serve with some creamy risotto (ok, I really wish I had thought of this) and enjoy!
With more of a broth base, this could even become a delicious spicy italian beef soup! Go crazay with it! Yummmmmmmm!
