And since I usually say no (they're overpriced and who knows how long they've been sitting there), I decided that I would make them fresh for him instead.
And by fresh, I mean in the slow cooker.
Because I've basically forgotten how to use any of my other kitchen appliances.
(What's an oven again? Stove? Huh?)
Obsessed.
*Slow Cooker Scrumptiousness*
Stuffed Bell Peppers
Ingredients
4 bell peppers
(or enough to fit your pot)
1 lb lean ground beef
1 cup cooked rice
1 can flavored tomatoes
1 tspn worcestershire sauce
2 tblspns ketchup
1 tspn black pepper
1 tspn minced garlic
(I added this bc I looove garlic)
1 tspn minced garlic
(I added this bc I looove garlic)
1/3 cup water
Stuff each pepper with the beef and rice mixture.
Take them out with a big spoon and dig in (don't use tongs because you will destroy them...I learned the hard way). Hubby nearly died of happiness when he bit in to his. We ate every last bite. No leftovers here, people.
Suffice to say we'll be cooking this one again soon.

Very home/heart comfort! I love stuffed peppers. There's so much you can add and fudge with. I love adding zuchini, diced tomatos and eggplant when in season. Go Greek and add olives!

DeleteI have made them this way many times. However, we like a sauce with our peppers so instead of using water, I use tomato soup. Leftovers are great. If you have enough leftovers they can be turned into "stuffed pepper soup" by adding beef broth and cutting the peppers up. You can add more beef and cut up peppers to this to make more!!
