Actually, all of my kitchen appliances have been since I've been out of town
This recipe was inspired by this one on good ol' Kalyn's Kitchen
But it's me, so the pan braising and such was a little too much
So I modified (read: simplified) and paired it down for two people
And came up with this
*Slow Cooker Lite* Balsamic Beef & Onions
Ingredients
2 beef tenderloin steaks
(you can also use boneless chuck roast but we had these frozen in our freezer)
1 tablespoon steak rub
1 tablespoon steak rub
1 teaspoon black pepper
1 tablespoon olive oil
1/4 cup water (optional)
1 large white onions
1 large white onions
1 can beef broth
1/2 cup balsamic vinegar
1 can tomato sauce
Peel and slice up your onion and throw them in the bottom of your pot
Throw your beef on top and drizzle with olive oil.
If they're not frozen like mine, you can rub them with the steak rub and black pepper. I poured it over the top and rubbed it gently to make it stick and much as possible.
Pour in your beef broth, balsamic vinegar and tomato sauce on the side of the pot.
Mix everything up.
If your steaks aren't sitting in the liquid yet, try to move things around so they're still on the onions but not on the bottom of the crock pot.
If it's not working, pour in the water so that they're in a little bath.
Turn your dial to low and head to work
Try not to think about how much fun you had on your vacation
Or how much you wish you could be there right now
Ugh.
Come back in 8-10 hours and pull it out of the crock pot.
I roasted some zucchini and squash and poured the juice over the top for some additional veggies.

I agree, who needs to get complicated? I never sear my beef before throwing it into the crockpot. Your recipe sounds lovely, specially with the generous amount of balsamic vinegar. If needed, I would add a slurp of red wine instead of water, to deepen the flavour.
