Every time I go in there, I order a barbacoa burrito and inhale the whole thing
I even bet Hubby that I could eat two burritos in one sitting
But that's another story for another day
So when I found a barbacoa slow cooker recipe on one of my new favorites, What's Cookin, Chicago?

I knew I had to try it
With my little twists
Note: this didn't really taste like the barbacoa at Chipotle, but it was still totally delicious!
*Slow Cooker Scrumptiousness*
Beef Barbacoa Tacos
Ingredients
2 beef tenderloin steaks
(you can use other beef steaks or pork too...
and you could use the same amount of below ingredients with more beef
and be fine if you're feeding more people)
3-4 cloves minced garlic
and you could use the same amount of below ingredients with more beef
and be fine if you're feeding more people)

(or my usual pre-minced jar equivalent)
1 onion
1 tablespoon cumin
1 cup brown sugar
12 oz bottle red La Victoria taco sauce
16 oz Coke

Water (optional)
Taco ingredients:
Tortillas, avocado, salsa, cheese, cilantro
Cut up your onions into cubes and throw them in the crock pot.
Add the garlic, cumin, brown sugar, taco sauce and Coke.
Mix everything up.
Add the steaks into the pot and make sure that they're sitting in a little bath.
If you don't have enough liquid (depending on your crock pot size and the amount of beef that you're using), add water to make sure that the beef is submerged.
Turn your crock pot to low and let it cook for 8-10 hours
And dream of the tasty goodness that's waiting for you at home.
I think this is one of those recipes where, the longer you cook it, the better it tastes.
Open up that pot and shred up the beef.
If you can, do this about an hour before you're done cooking and let it continue to soak up the juices.
Come back, make up those tacos and enjoy!
