*Slow Cooker Scrumptiousness* Beef Bourguignon

I have a confession to make
Before I tried this recipe, I didn't know what beef bourguignon was
(and I'm still not 100% sure I do)
I had only heard of it in the Julie and Julia movie
And I still am not totally sure of how to spell it

What I do know?
I know how to make this crock pot version of it by my fav A Year of Slow Cooking
It's frickin delicious
Fairly diet friendly
And it was super easy
(although it's not the prettiest thing that I've ever made, after looking back at these photos)

*Slow Cooker Scrumptiousness*
Beef Bourguignon

Ingredients
2 beef steaks (or up to 3 lbs beef roast or stew meat)
6 slices bacon
2 tblspn olive oil
1 onion
3 carrots
1 tblspn pre-minced garlic
1 tbspn herbs de provence
1 tsp salt
1/2 tsp pepper
1 tblspn tomato paste
2 cups red wine

Ya'll ready for this?

First, slice up you onion into rings and peel and cut your carrots into cubes.

Put enough olive oil in the bottom of the pot to just cover it

Lay down three slices of bacon to cover the bottom

Add the onions and garlic

Put the meat on top.
If your meat is frozen like mine, you may want to add a little bit of olive oil to make everything stick.  Otherwise, just sprinkle the herbs on top and use your fingers to spread them around.

I added the tomato paste in between the two pieces of meat, but in retrospect, I might rub the tomato paste around the meat before sprinkling on the herbs.

Cover the beef with a little bacon blanket (the last three pieces)

Add the carrots and red wine in the side of the pot

There's enough wine left to have a glass or two with dinner
Fabbbbb

Cover it up and cook on low for 8 - 10 hours.
Go get a good workout in for that wedding that you have coming up
Or else you're going to be the fat bridesmaid
...oh wait, that's just me...

The meat will be so tender when you get back that it'll just melt in your mouth
Inhale the whole piece
And enjoy every bite!
