Cheesy Zucchini Bake Recipe {and some Flip Flip vino}

I discovered that I love zucchini
And Hubby will tolerate it
This is a breakthrough.

So when I found this recipe for a Cheesy Zucchini Bake on Kayln's Kitchen
I knew it would be the perfect inspiration for this meal.


And when I got this bottle of Moscato from FlipFlop Wines
I knew it would be the perfect pairing.



Healthy Cheesy Spicy Zucchini Bake

Ingredients 
2 medium zucchini 
2 medium yellow squash
5 tblspns fresh basil
3 tblspns green onion
1 can diced tomatoes
1 tblspn red pepper flakes
{reduce to 1 tsp or less if you prefer less spicy foods}* 
1/2 tspn thyme
2 tspns garlic powder
1/2 cup + 1/2 cup grated low-fat cheese
(I used 1/4 cup cheddar and 1/4 cup mozzarella to make up each half cup)
1/2 cup coarsely grated Parmesan
Salt and fresh ground black pepper to taste

*Note: there have been a couple of comments that this dish is too spicy.  I love super spicy foods, but if you're not a fan, you can reduce the amount of red pepper flakes to 1 tsp or less {or remove entirely} to work better for you!

First, slice up all of the ingredients.
Cut your zucchini and squash into little half moons and slice up your basil and green onion.
I did most of this on the weekend so there would be less to do when I got home from work.


Preheat oven to 350 degrees.  Grab an 8" x 8" dish and spray it with non-stick.


Oh did I mention that this recipe is easy?  
Combine everything except the extra 1/2 cup of cheese in a bowl and mix it all up
And season with salt and pepper to taste.

That wasn't too rough, right?
If I'm making dinner outside of a crock pot on a weeknight, it better be easy.
Pour the yumminess into the baking dish and bake (uncovered) for 20 minutes
Pull it out and throw that extra 1/2 cup of cheese on top so it can be nice and melty.
Then, pop it back in for 10 - 15 minutes.



You can eat it by itself if you're being healthy
Or add it on top of a bowl of pasta if you're my husband.



Inhale with a crisp glass of white wine
