But on those days when the temperature dips
There's nothing better than an easy, delicious soup recipe
Especially when you can pop it in the crock pot and have it waiting when you get home

*Slow Cooker Scrumptiousness* Split Pea Soup
Ingredients
1 package of bacon
1 lb bag of frozen peas
2 carrots
4 celery stalks
1 onion
2 garlic cloves
{or preminced equivalent}
1 - 32 oz can of chicken broth
1 bay leaf
1 tsp thyme
First, chop up your carrots, onion and celery into big chunks
{You can do this the night before}
Throw the bacon in the bottom of the crock pot
{I used the whole package, but a few pieces would probably be sufficient}
Add all of the veggies, garlic and the spices
And then mix it all up
Pour the chicken broth over the top.
And put it on low for 8-10 hours.
Mix up the soup so that the bacon shreds into smaller pieces
And fish out the bay leaf
Then stick your immersion blender in and blend it up
Or transfer to a blender
Enjoy every last warm bite
With some delicious french bread
Or just on its own!

Mix up the soup so that the bacon shreds into smaller pieces and remove the bay leaf. Use an immersion blender to blend, or transfer to a blender.
Serve hot with fresh bread to dip.

ReplyDeleteIt looks great, but I feel compelled to point out that it should read stalk of celery, not stock. At first I was trying to figure out if you meant soup stock with celery. Sorry, not trying to be mean, that was bothering me. It really does look great though!
