Cowboy Casserole {Recipe}

So I was on Pinterest the other day
{don't all of my stories start this way?}
And I saw this casserole
With tatertots on top
And I decided instantly that I had to try it

I clicked through to find the recipe over at The Cutting Edge of Ordinary
And Lisa is right
It does look like dog food
But it tastes like heaven.


Cowboy Casserole

Ingredients
1 1/4 pounds ground beef
1 onion
3 cloves garlic {or the pre-minced equivalent}
1 can corn
1 can condensed cream of mushroom soup
2 cups shredded cheddar chees
1/2 cup milk
4 tblspns sour cream
1 - 30 oz bag frozen tatertots

Let's do this thang.


First things first.  Take those tatertots out of the freezer and let them defrost.
Preheat the oven to 350 degrees
And dice up your onion


Pop the onion into a pan and cook it for 3-5 minutes



Add your garlic and cook for another minute


Add the beef and cook it until there's no pink left


Drain this and put it aside in a bigger bowl for the moment
Grab another bowl and wisk up the soup, milk and sour cream.  


Pour this over the bowl with the beef mixture and stir it up


Then add the corn and a cup of the cheese and mix everything together



Grab a 9" x 13" pyrex and spray it with some Pam.  Put a little more than half of the tatertots in the bottom, so that they pretty much cover it.


Add your beef mixture on top of that.


And then dot the top with tatertots {you can also save more tatertots for the top if you're into that}



And add the rest of the cheese on top


Bake at 350 for 30 - 40 minutes


Pop it out of the oven,
Scoop it up
And enjoy
{with your stomach, not your eyes
like it said, it's not the prettiest thing I ever made}

  1. It would take a lot to get past the dog food appearance...I'm just going to believe you when you say it's good. Well, until I discover that I only have these things in my house and remember I can throw them all together!

  2. I call it "Tator Tot Casserole" and, yes, it is HEAVEN. Definitely a recipe I grew up on and continue to bake.
