*Slow Cooker Lite* Black Bean Chili

I shared this one over at Chic n Savvy Reviews a while back
But I just cooked it again and it was just as tastey
This time, I served it over chips with salsa and condiments
For a game time party at our place


*Slow Cooker* Chili

Ingredients
1 lb. extra lean ground beef
2 cans of beef stock
2 tspns olive oil
1 large onion
3 cans black beans
1 can pinto beans
2 cans diced tomatoes
2 cloves of garlic, minced
5 tblspns chile powder
1 tblspn ground cumin
1 tblspn ground coriander
1 pinch cinnamon

Garnish options:
Cilantro, avocado, lime wedges, sour cream,
grated cheese, chopped green onions, bacon bits
or whatever sounds good to you!

We're going to brown the beef first, because it kind of freaks people out to put raw meat in the crock pot as much as I do. 
Throw the beef in a pan with a touch of olive oil and stir it up until it's all brown and not sticking together.
You can do this the day before.


Rinse your beans


Put the beef, beef stock, pinto beans, and black beans together in the crock pot.  Mix it up good.


Add the tomatoes, mushrooms, onions, garlic, cilantro, chile powder, coriander, cinnamon and cumin to the pot. 
Mix it all up.


Cover it up and go set up for the rest of your BBQ.  Spend some time with your kids.  Go relax by the pool.  Enjoy some gardening time.  Just come back in 6-8 hours.


Hubbies and children may enjoy some cheese, sour cream, bacon bits or other deliciousness on top

If you're on a diet like me, you cannot.
But you can throw on some avocado, low fat cheese, or chopped green onions
And you're going to look hot in your bridesmaid dress.
{or whatever your goal is}
So there.

  1. That looks fantastic. I love black beans and this looks like it would be perfect for that cool fall weather. Come visit. We have cranberry wontons today.
