But sometimes, they just don't work for me as is
I have to have something that can be left for at least nine hours while I'm at work
And I like it to be easy enough to throw together in a few minutes before I leave
So I modify
Even with classics like the sausage and beans from Kalyn's Kitchen
And, this time, it worked
{sometimes it doesn't...}
This made a totally delicious meal
That, as Hubby commented, *sticks to your stomach*
And really fills you up with healthy ingredients
Slow Cooker Italian Sausage & Beans
Ingredients
5 links turkey Italian sausage
1 lb. dried white beans
1 lb. dried white beans
3-4 stalks celery
3-4 garlic cloves {or the preminced equivalent}
2 tblspns dried sage
3-4 garlic cloves {or the preminced equivalent}
2 tblspns dried sage
2 tblspn Italian seasoning
Salt & pepper
1 can diced tomatoes
1 - 2 cups water
First, you need to chop up your celery {I did this the night before}
Put the white beans in the pot.
Dried.
Yes, I said it.
No soaking required in this kitchen.
Add the chopped celery on top
Then the garlic and spices
And the tomatoes {with all of the juices}
Fill up your tomato can with water 1-2 times depending on how large your pot is
And dump that in too
Mix everything up
Set it to low
And leave for your work day {8-9 hours}
Come back and mix everything up
The beans should have softened and everything should stick together a little
I added a bit more water {maybe 1/4 of a cup}
And some additional salt and pepper at this time to taste
Chop up your sausage, throw it in a pan and heat it up
Then add it to the crock pot
And wait another hour or so
This is where I usually walk the pup
But I think you could probably skip the waiting if you want
Scoop into a bowl
And enjoy that warm, healthy, filling goodness!

Put the dry white beans in the crock pot. Add the chopped celery, garlic and spices on top. And the tomatoes {with all of the juices} and 1-2 cans worth of water on top. Mix and set to low for 8-9 hours.
Come back and mix. Add about 1/4 cup water and some additional seasonings to taste, if necessary.
Chop up your sausage, throw it in a pan and heat it up. Add to the crock pot and let cook on low for about another hour.
