*Slow Cooker Scrumptiousness* Curried Pumpkin Apple Soup

Me and my slow cooker are BFFs
So when I find a recipe that isn't supposed to work for her
I do what I can to make it happen

That's what I did with this delicious pinned recipe
And it was just perfect



*Slow Cooker* Curried Pumpkin Apple Soup

Ingredients
1 onion
1 cup chopped celery
1 apple
2 tspns curry powder
3 1/2 cups chicken broth
2 1/2 cups canned pumpkin
1/4 tspn salt
1 bay leaf
1/3 cup heavy cream
3-4 tblspns honey
Garnish: sour cream {optional}

*Note: you could easily make this a healthy recipe by cutting the heavy cream.  I didn't do it, but I tasted it before I added the cream and it was still totally delish!*

First you must chop.
If you're like me, do it the night before.
Chop up the onion, celery and apple into large chunks
{you'll be blending them eventually so don't worry about getting little pieces}

Add the onion, celery and apple into the pot.


Then add the pumpkin on top.


Followed by the curry powder, salt and bay leaf.


And then dump the chicken broth over it and mix it all up.


Put your slow cooker on low and cook for 7-9 hours.


Come back, stick your immersion blender in there and blend it all up.


About 10 minutes before serving, add the heavy cream and honey and stir it all up.


 Top with a plop of sour cream and enjoy!

Blend the soup using an immersion blender, or transfer to a regular blender.  About 10 minutes before serving, add the heavy cream and honey and stir.

  2. It looks like it tastes good. But, blended soups give me the creeps for some reason. Not sure why, but I just can't do it. Not even tomato. Soup needs chunks in my life, apparently.
