*Slow Cooker Scrumptiousness* Spicy Italian Beef

I guess I'm all about Miss K this week....she's fresh in my brain since I just saw her at her epic engagement party weekend.

So what did I do when I got home and was missing her?  Steal Borrow another one of her slow cooker recipes, of course!  Because I know ya'll have been missing the *Slow Cooker Scrumptiousness* up in here. 


Spicy Italian Beef

Ingredients
1-2 lbs beef roast, sirloin tip or rump roast
(I used frozen sirloin tip)Half of a 12 ounce jar of Italian Giardiniera, drained
(less if you want it less spicy)
Half of a 12 ounce jar pepperoncini peppers
1 envelope Zesty Italian salad dressing
10 ounce can condensed beef broth
10 ounces of water


I modified her recipe slightly because I'm a one pot wonder kind of a person.  So I just threw it all in instead of pre-mixing.

Place the beef in the crockpot
 
 
Pour the dry salad dressing on top
 
 
Drain and add the pepperoncinis and the Giardiniera (anyone have any idea how to actually pronounce this word?!)
 

Pour the condensed beef broth over the top.  If necessary (it was for me) pour up to 10 oz of water over the top to make sure your beef is fairly well covered.  Don't worry, this puppy has plenty of flavor, so you're not diluting anything.
 
 
Turn the pot to low and then do whatever.  Hang out with your BFFs.  Get your hair done.  Do some dress shopping.  Have a cocktail.  Just come back in about 10 hours (this one's great for the working girls because it shouldn't burn after 6-8)
 
 
K's recipe says to shred the beef.  All I had to do was stir it and it basically fell apart into spicy shredded deliciousness.
 
 
Throw it over some rice (because that's what we do) or serve with some creamy risotto (ok, I really wish I had thought of this) and enjoy!
 



With more of a broth base, this could even become a delicious spicy italian beef soup!  Go crazay with it!  Yummmmmmmm!

Party Time {Real Style}

I'm baaaaaaaaackAfter a crazy week of jetsetting and a crazy day of desperately trying to catch up with life, I'm back to my poor little neglected blog.

I had a lovely Saturday, which included
chicken fingers for brunch,
bridesmaid dress shopping (more on this soon),
and major beautifying getting our nails, hair and makeup done
and of course, my BFFs!

The end result was some major engagement party {real style}

Hair: Blo Salon, Makeup: Sephora

More than a couple of cocktails


And a whole lot of picture taking fun!

Busy Bee

My life is just a touch crazay right now

I know he has a Santa hat on,
but he's a busy bee
and he has the same look that I do right now...
it's not pretty.

I'm headed out of town for work from tonight until Thurday
And then out again for K's engagement partay festivities from Friday through Sunday

Work is crazy
Booger dog is crazier
And my life feels the craziest that it's been in a while

Moral of the story?
No cooking, baking, crafting, crock potting (I think I just made a new word?), knitting, hippity hopping, blogging or (actual) relaxing for the next few days.


Never fear, loyal readers.  I've got some awesome recipes in the works, and hopefully will have some fun photos to share after my jetsetting adventures.

Classic Crock Pot {and a winner!}

It's been a very busy week, with a busier week to come, so Hubby and I have been going back to the classics in the crock pot. 

We had BBQ Chicken Grilled Cheese Sandwiches last night...


And are planning on Sweet and Sour Meatballs when the leftovers run out...


I guess what I'm saying is, don't expect anything too exciting from me in the next few days.

March Madness

So I forgot to wear green today
Because all I could think about was winning my pot of gold
In my tournament bracket competition.


In addition to having serious (life) March Madness (both work and personal life are crazay busy right now), it's that beautiful time of year
The time to sit back
drink beer
watch basketball
and actually care about it (no offense to serious basketball fans out there)

This year, instead of acting like I have any idea what will happen, I decided to get random
Except for the fact that I chose UCLA to go all the way (which may well be the death of my bracket)

*Slow Cooker Scrumptiousness* Alfredo Chicken with Fettucini

I know what you're asking yourself.  Can you seriously make pasta in the crock pot? 
No. 
I mean, yes you can. 
Check out my girl over at Crock Pot 365.  She does it all the time.
(Poor lady has never even met me and she's already *my girl*  I hope she doesn't think I'm nuts...)
But today, we're just faking it.

Moving on.  This recipe is an adaptation of a recipe that a good friend of mine sent me.  We'll call her K, also known as The Future Mrs. N.  We'll get her into blogging eventually.  For now, I love you K!


This was one of Hubby's favorite recipes that I've made.  He even sincerely thanked me for making such delicious dinners for him and said that it relaxed him after a busy day.  {Sigh}.  If that doesn't make it worth it, I don't know what does.

Recipe. 
Go.

Alfredo Chicken with Fettucini

Ingredients
2 Frozen Chicken Breasts
1 Jar of Alfredo Sauce
1 Can Sliced Mushrooms (drained)
3/4 of a Package of Fettucini


This is another one of those super easy ones.  Have you noticed that it's pretty much all I do?  Put a little bit of sauce in the bottom of the crockpot and place chicken breasts on top


Pour on the rest of the sauce and then the mushrooms on top and stir it all up


Turn it on low and leave it be for 7-8 hours.  Do something awesome.  Like making a pie for Pi day.  Ok, maybe that makes me more of a geek than awesome.  Whatever.


Come back and cook up your pasta, the normal way.  It doesn't have to be fettucini.  Just whatever you're feelin.  (See, I totally faked you out.  Hopefully you can cook pasta too.  It's pretty much just as easy as the rice that we made for the other ones.  You should be fine.  I have faith in you)


Shred up the chicken with a fork (or leave it whole if you'd like...you know me and my shredded meat) and pour all of the hot deliciousness all over that big bowl of steamy pasta. (Note: I kind of wish I hadn't shredded it this time.  The original recipe was just for the chicken and it would have been really tasty that way too!)


Eat. It.
