Vay to the Cay

I'm really looking forward to July
It's going to be a month o happiness
And I will officially be out of town 
every
single 
weekend



Between my long trip with Hubs to beachy sunny happiness
Weddings, bridal showers, and just for fun trips
I'm going to be allll over the place

So please excuse me if I post a little less frequently than usual
And then bombard you with ridiculous amounts of vacation pictures



But don't worry

My Day

Apparently, today is my day.


I interrupt this regularly scheduled programming for some totally awesome news!

Camera Phone: Sometimes I'm Weird

Soooo...it's been a while for the camera phone thing
Whatevs.
Let's do this

Sometimes I take pictures of myself in the car
When I'm in traffic
And it takes me an hour to go a little over six miles
Is that weird?
What else am I going to do?


Sometimes I take pictures of myself in the dressing room
Or in the bathroom
When I try on dresses
With my pants and shoe still on
Because I'm too lazy to take them off
Is that weird?
I'm sensing a theme...


Sometimes I wear flip flops to the dog park
Which is mostly dirt
And I always regret it
Because my feet end up looking like this
But I do it anyway
Maybe not weird
But pretty gross


Sometimes this is what I have for dinner
Bread. Olive Oil.
Done.
Yes, it's weird.
I've accepted it now


Sometimes my dog is weird too
She looks like an old man sleeping
And somehow gets under the covers


Or tries to come with on vacation
By *hiding* in our suitcase


But sometimes she's calm
It doesn't really happen very often
It's pretty weird.
So when it does, I have to use the zoom on my phone to document it
So I don't wake the sleeping beast


And sometimes she's just plain cute


And that's not weird.
So at least I've got that going for me.

*Slow Cooker Scrumptiousness* Vegetarian Taco Soup

I've been wanting to try this for ages
I love me some tortilla soup
And I love me some A Year of Slow Cooking
So it had to come up eventually.
This is her recipe
With my twists


And
The only cooking technique you need to know for this recipe
Is how to use a can opener...

*Slow Cooker Scrumptiousness*
Vegetarian Taco Soup

Ingredients
2 cans kindney beans
2 cans pinto beans
2 cans corn
1 large can diced tomatoes
1 can tomatoes and chiles
1 packet taco seasoning 
1 packet ranch dressing seasoning
Optional garnish: Shredded cheese, tortilla chip strips, sour cream, avocado 


I forgot to defrost my chicken and couldn't get it out of the packaging, so this became vegetarian.  You could probably throw a few chicken breasts in the bottom of the pot and shred it at the end if you'd like some meat.  But for now, this one's for you Mrs. D. 

Drain and rinse the beans and toss them in your pot


Throw the seasonings on top. 

Open the cans of corn and tomato and dump both the veggies and their juices in too 


Then stir it all up


Turn your crock pot to low and go craft.
Make this.  Or this.  Or this.
Just come back in 8 - 10 hours (or longer...mine cooked for about 11) and check out the yumminess.


Ladle it into a bowl and top with cheese, avocado and tortilla chips
(and sour cream, which I forgot to pick up at the store)

Real {Weekday} Style

Usually I let my real style loose on the weekends
But on the weekdays, I change into sweats,
walk the dog,
make dinner
and only take off the sweats for PJs

The white spots are not on my dress
They're on my dirty mirror
...so embarrassing...



But my little brother turned 22 last week
And a fancy dinner made me rethink my post work weekday style
So I put on a little makeup
Threw on a little black dress
Took the curling iron to my hair
And (of course) took a couple photos to share with you



This outfit was mostly courtesy of my epic Target shopping trip
I love you Target
And even though this is very much not a sponosored post in any way
If Target ever decides to sponsor me, I will give my first born child for that gift
(or something like that)

My Fairy Blogmother

Not sure if you noticed
(how could you not)
But my little bloggy blog blog got a makeover
It used to be a bit of an ugly stepsister
But now it's all ready to go to the ball

The old design...

I've been behind the last few iterations of blog design
Slaving away in design mode and trying desperately to figure out what codes to switch to make everything look pretty (you've probably been there too, right?)
But then I got an email from Erika
Appropriately named *The Fairy Blogmother*
She turned the whole thing around
And gave my blog the professional look that I couldn't do on my own


Thirty something emails (and a ridiculous amount of patience on her end) later
She created the magnificence that you see here today
She replied quickly to my emails
Made every change I asked for
And even switched things back when I changed my mind

My new button makes me grin every time
It's me, Hubs and Booger!
My Happily Ever After

Oh and she says *perf*
And abbrevs things like I do
So we were besties from the beginning

*Slow Cooker Lite* Homemade Pesto Chicken

We're doing a bonus recipe this week people!

Hubby loves everything pesto.
I love everything crock pot.
And right now, I'm trying to love everything low carb.

Ok, but seriously, this was inspired by a normal pesto chicken dish
And modified by me to fit your slow cooker.



*Slow Cooker Lite* Homemade Pesto Chicken

Ingredients
2 chicken breasts
(mine were frozen)
1 can chicken broth
1.5 cups basil
2 - 3 tblspns olive oil
1/2 tblspn lemon juice
2 cloves garlic
1/2 cup pine nuts
1/2 cup parmesean cheese
Salt and pepper to taste


First we're going to make our own yummy pesto from scratch.  I had no idea how easy this was. 
Put the basil and olive oil in your mini food processor and chop it up
(perhaps my second favorite kitchen appliance to the slow cooker)


Add in your lemon juice, garlic, salt and pepper, and about half of the pine nuts (you can add them all if you want, but I like to have some chunky ones in there). 
You can add about 1/2 a cup of parmesean too, but I was trying not to make it too cheesey.  And I think the cheese might melt weird if it's in the crock pot for too long.
Blend it up, and throw in the extra pine nuts afterwards if you held them aside.


Now open your broth and put it in your crock pot
Hopefully your pot isn't as dirty as mine...geeze I'm embarrassed...
You can add less than a can if you're only going to cook the chicken for 6-8 hours.  I often have to leave mine for up to 10 hours, so I add more broth to keep it from drying out.


Add the chicken in the pot.


Throw your pesto on top of the chicken.
I added some leftover onions too.  You don't have it.  It's your call.


Set the crock pot to low and chillax. 
Or if you're me, feed the dog, go to work, go to spin class, come back, take the dog for a walk, take a shower, do a little blogging
and
then
breathe.


Come back about 7 1/2 hours later
(again, add more or less broth depending on how long you're going to be gone and how strong you want the taste to be)
Throw some deeeelicious parmesean cheese on top of that baby.
And then let it cook for another fifteen minutes, or until the cheese turns into melty goodness


**Note: time got away from me when I made this and it got a little burn-y looking.  I had it in the crock pot for 10-11 hours before I took it out.  And it was still deeeeelish, despite being a touch oogly.  Sorry for the only eh pictures**

Serve over pasta, in a sandwich or with veggies.
Spoon some of the pesto-y onion-y broth-y goodness on top for an extra treat
(I've clearly been on an asparagus kick lately...I threw these in a pan with a bit of olive oil, lemon juice, salt and pepper and threw a little extra parmesean on in the end...yummmmm)


It may not be gorgeous, but it was simply delicious.
