As I march nearer and nearer to K's wedding
(and bachelorette! ahh!)
I'm seriously feeling the pressure to keep it
healthy
So that I fit into my dress
And thus, I've been leaning heavily on the fabulous recipes
Of my fabulous low carb Kalyn of
Kalyn's Kitchen
Like this one for
zucchini pizza
Which inspired this healthy meal
That satisfies without
fat-i-fying (I made that one up right there...)!
Healthy Zucchini Pizza Sticks
Ingredients
4 zucchinis
Olive oil
Salt & pepper
1/2 cup tomato sauce
(more if you like saucy pizza)
1-2 cups low fat mozzerella cheese
Pizza toppings
(go crazy! we used low fat pepperoni, basil and onions, but you can use whatever!)
Have your hubby turn the grill on to
medium-high
(or do it yourself I guess...I still don't really know how to use the thing)
Slice your zucchini in half
Brush with olive oil
And dust with salt and pepper
Throw it on the grill for 8 - 10 minutes
Skin side up
Then pull it off
And spread on sauce
Add some cheese
Toss on toppings
And sprinkle some extra cheese for good luck
Try not to spill anything
...ok that's totally not humanly possible...
Put your zucchinis back on the grill for another
8 - 10 minutes on high
And then pull them off
And enjoy the melty, delicious, pizza-y

Turn the grill on to medium-high
Slice your zucchini in half, brush with olive oil and dust with salt and pepper.
Grill for 8 - 10 minutes.
Pull them off the grill and add sauce, cheese and toppings.
Put them back on for another 8 - 10 minutes on high. Take them off and enjoy!
