stares at me when I look in my closet
Seriously.
This is yet another recipe inspired by one found on Pinterest

Skinny Taco Casserole
Ingredients
1 lb ground light turkey
1 small onion
1 bell pepper
1 clove garlic {or preminced equivalent}
1 pkg taco seasoning mix
8 ozs taco sauce
1 cup fat free sour cream
1 cup fat free cottage cheese
About 1 cup tortilla chips
1 cup light shredded cheddar cheese
Salsa to garnish
Preheat that oven to
400 degrees
Chop up your
bell pepper and your
onion.
Throw your ground
turkey in a
skillet for a few minutes and mix it up to start to cook.
Add the
onions, peppers and
garlic and mix it up until they're all cooked
Add the
seasoning and
taco sauce
And enjoy the fact that your house will
instantly smell like deliciousness is all up in the kitchen
Turn
off the heat and set the skillet aside for a moment
Now, spray some
nonstick on a 9'x13' pyrex dish.
Crush up a little more than half of your
chips and put them on the bottom
Add the yummy turkey mixture from the
skillet on top of the chips
Mix up the
sour cream and
cottage cheese in a bowl and add it to the top
Sprinkle the
cheddar cheese and
extra chips on top
Toss it in the oven and
bake it
{uncovered} for about
30 minutes
Top it off with some
salsa
And serve it up

Taco Casserole Lite
Ingredients
1 lb ground light turkey
1 small onions
1 bell pepper

8 ozs taco sauce
1 cup fat free sour cream
1 cup fat free cottage cheese
About 1 cup tortilla chips
1 cup light shredded cheddar cheese

Directions:
Heat oven to 400. Spray cooking spray on bottom of a 2-quart
casserole dish; set aside. In a skillet,
cook chicken, onion, peppers, and garlic clove until tender. Add
seasoning mix and taco sauce;
set aside. In a medium bowl, combine sour cream and cottage cheese;
set aside. Place half the
broken chips in the bottom of casserole dish. Add meat mixture to
cover the chips, then cover the
meat with sour cream mixture. Sprinkle with cheese and remaining
crushed chips. Bake,
uncovered, for 30 minutes or until cheese has melted. Top with 3/4
cup salsa if desired.
