The Day I Got Dressed

I mentioned last week that I've been pretty sick
So when I actually got out of my sweats for anything other than a few hours at the office
It was a major accomplishment

And when it looked pretty cute
Albeit casual
I was pretty impressed with myself

Tshirt: H&M, Sweater: J Crew Outlet, Leggings: American Apparel, Boots: Costco, 
Sunglasses:, Necklace: Seek First (won on bouffe e bambini!)

Please note that sunglasses were a necessity
Even though I am clearly indoors
Not just because they were a totally cute part of my outfit
But also because I was still too sick and tired to put any makeup on
Lo siento

Friday Fabulousness *Halloween*

So Halloween is coming up
And as much as I love it
It's on a Monday

And I have to work most of the weekend before

So my Halloween will probably consist of carving pumpkins
A few weeks early

Dressing my puppy up as something ridiculous
Only to watch her rip it off thirty seconds later

And maybe
Just maybe
Throwing on a costume out of stuff I already own
And running down to the local bar for a drink

Suffice to say, I haven't collected a ton of Halloween pins myself
But, as you can see, other people had some great ideas.

Out Sick

I've been sick
Like emergency room sick
Like off of work in a time when I'm too busy to be sick 
Like body and my brain in an epic battle sick

And I'm so over it right now.

And I am beyond tired of sitting on the couch and laying in bed
But I wanted to apologize for my lack of posts or anything interesting
And let you know that I'll be back
Just as soon as I'm healed up
And caught up

Hope everyone's weeks are going better than mine :)

Skinny Taco Casserole {Recipe}

In case you haven't noticed, I'm trying to find healthy recipes
K's wedding is approaching very quickly
And I swear that bridesmaid dress stares at me when I look in my closet


This is yet another recipe inspired by one found on Pinterest
And the original can be found here

Skinny Taco Casserole

1 lb ground light turkey
1 small onion
1 bell pepper
1 clove garlic {or preminced equivalent}
1 pkg taco seasoning mix
8 ozs taco sauce
1 cup fat free sour cream
1 cup  fat free cottage cheese
About 1 cup
tortilla chips
1 cup light shredded cheddar cheese  
Salsa to garnish

Preheat that oven to 400 degrees
Chop up your bell pepper and your onion.

Throw your ground turkey in a skillet for a few minutes and mix it up to start to cook.

Add the onions, peppers and garlic and mix it up until they're all cooked

Add the seasoning and taco sauce
And enjoy the fact that your house will instantly smell like deliciousness is all up in the kitchen
Turn off the heat and set the skillet aside for a moment

Now, spray some nonstick on a 9'x13' pyrex dish.
Crush up a little more than half of your chips and put them on the bottom

Add the yummy turkey mixture from the skillet on top of the chips

Mix up the sour cream and cottage cheese in a bowl and add it to the top

Sprinkle the cheddar cheese and extra chips on top

Toss it in the oven and bake it {uncovered} for about 30 minutes

Top it off with some salsa 
And serve it up
For a skinny take
On a fabulous Mexican meal

Taco Casserole Lite

1 lb ground light turkey 1 small onions 1 bell pepper 1 clove garlic {or preminced equivalent} 1 pkg taco seasoning mix 8 ozs taco sauce 1 cup fat free sour cream 1 cup  fat free cottage cheese
About 1 cup
tortilla chips 1 cup light shredded cheddar cheese  
Salsa to garnish


Heat oven to 400. Spray cooking spray on bottom of a 2-quart casserole dish; set aside. In a skillet,
cook chicken, onion, peppers, and garlic clove until tender. Add seasoning mix and taco sauce;
set aside. In a medium bowl, combine sour cream and cottage cheese; set aside. Place half the
broken chips in the bottom of casserole dish. Add meat mixture to cover the chips, then cover the
meat with sour cream mixture. Sprinkle with cheese and remaining crushed chips. Bake,
uncovered, for 30 minutes or until cheese has melted. Top with 3/4 cup salsa if desired.
