Baked Breaded Artichoke Hearts {Easy Side Recipe}

Ever looked at a picture of something and thing *hmm...I bet that's hard to make*
Only to be pleasantly surprised otherwise?
That's what happened with this uber easy recipe
{which I modified a bit on the way}

For some reason, in my head, anything breaded is difficult
But this one was nice and easy, and quickly prepped ahead of time to just pop in the oven when you need it
It wasn't my personal favorite recipe of the world, but my dad was totally obsessed
And Hubby liked it too...and we all know what an accomplishment it is to get him to eat veggies...


Baked Breaded Artichoke Hearts

Ingredients
2 cans artichoke hearts
2 eggs
1 cup bread crumbs
1 tblspn garlic powder
2 tblspns parsley
Salt and pepper
3 tblspns Parmesan cheese
4 tblspns EVOO


First thing's first.
Take out those artichoke hearts, rinse them off and let them dry on a paper towel


While they're drying, crack your eggs in a bowl and wisk them up


Then, in a separate bowl, combine your bread crumbs, garlic powder, parsley, salt, pepper, and parm.
Mix it up.


Prep a little pyrex with some nonstick cooking spray

Now, assembly line style:
Dip each artichoke heart in egg
Dredge it in the bread crumb mix
{aside: I feel like the word dredge is so awful for something that just means dunk it in awesomeness...}
And pop them in the pyrex


Once you're done, dump the rest of the breadcrumbs over the top for extra crusty goodness
And drizzle with olive oil


This is where you can pause if you're doing this ahead of time.
Ready now?
Ok cool.

Preheat your oven to 375 and pop them in there.
Cook them for about 15 minutes
Pull them out and serve!
