I went a little off the map with this one
I knew that I wanted to make a relatively healthy veggie chowder after pinning a few of them
But I wasn't sure exactly which one, or how to do it
So what's a girl to do, but just dive in and go for it
And, lucky for me, it was fab
Even Hubby, who's not a huge vegetable lover {read: he eats like a picky five year old} thought it was great
I'm going to deem this one *lite-ish*
Because it's not quite uber healthy
But it's not the super-bad-for-you version either
*Slow Cooker Lite-ish* Vegetable Chowder
Ingredients
1 cup chopped onion
1 cup chopped celery
2 cups chopped broccoli
1 package frozen cubed potatoes
4 - 5 cups chicken broth
1 tblspn minced garlic
1 tblspn basil
1 tblspn thyme
1 tsp salt
1 tsp pepper
1 tblspn basil
1 tblspn thyme
1 tsp salt
1 tsp pepper
2 tblspns flour
1 cup fat free milk
1 - 2 cups low fat cheddar cheese
Here's what you do. Chop up all the veggies ahead of time. Throw the potatoes, onions, celery and broccoli in the pot.
Add garlic, basil, thyme, salt and pepper. And pour the chicken broth over the top.
Mix it up, turn the crock pot to low, and let it cook for 6-8 hours.
Come back, mix in the flour, milk and cheese.
Turn the crock pot up to high and let it cook for another 30 minutes to an hour, or until the cheese is starting to blend in.
Scoop it up and enjoy that chowdery goodness
Without all of the guilt.
