They're yummy and substantial and still fairly healthy
{or at least more so than regular potatoes}
So when I saw this recipe for sweet potato chili,
And especially when I read how frickin easy it was,
I went for it.
Oh, and get this.
Hubby ate every. last. leftover.
*Slow Cooker Lite* Sweet Potato Chili
Ingredients
3 sweet potatoes
1 onion
1 - 28 oz can crushed tomatoes
1 can diced tomatoes
1 can kidney beans
1 can black beans
3 tblspns chili powder
2 tblspns cumin
1 1/2 tblspn brown sugar
1 tsp salt
3 cloves preminced garlic
PS you can add ground beef if you're feelin' it. But Hubby and I have been trying to do more meatless, both to be a little more healthy and a little more frugal. And it was perfectly delicious and filling without the meat.
First you gotta peel your sweet potatoes and chop them into little 1" blocks. Ish. I hate chopping sweet potatoes so mine were a touch bigger. Chop up your onion into big blocks too.
Guess how easy this is.
Put everything in the pot.
Mix it up.
Turn it to low and cook for 10 hours.
The.
End.
Easiest recipe ever.
And it's pretty much all veggies.
Top with cheese, onions, cilantro, and whatever else is in the fridge
And enjoy the fragrant, delicious, totally healthy vegetable chili that you just created!
