I went out and bought more sweet potatoes just so I could have these as a snack again

Sweet & Spicy Smashed Sweet Potatoes
Ingredients
3 sweet potatoes
{get the longer, skinnier ones}
4 tblspns brown sugar
1 1/2 tsp ground cumin
2 1/2 tsps chili powder
1 tsp garlic powder
1 tsp onion powder
1 - 2 tblspns olive oil
First, peel your potatoes and cut them up into 1 - 2 inch slices.
Pop them in a pot of water, turn the stove all the way up, and let them sit for 10 - 15 minutes.
Total.
Not 10 - 15 after they boil.
They should be soft, but not ready-to-be-mashed soft
Drain and let them cool off.
While they're cooling, combine the brown sugar, cumin, chili powder, garlic powder and onion powder.
I've officially decided that this is the. best. spice. mix. ever.
I'm going to use it to make rubs for veggies and salmon and just eat it out of the bowl.
I even took some of the potatoes that fell apart a little and mashed them with a little bit of the mix and it was spectacular {all important photo of my snack below}. Trust me, this makes an awesome mashed sweet potato too.

Ok, back to the recipe.
Once they cool off a touch, you get to smash them
Lay them all out on a sheet of wax paper, take a cup with a bottom about the same size as most of your potatoes and put pressure on the potatoes until it crushes. Use a spatula to de-stick it from your cup.
You don't want it to be so crushed that it's falling apart. It's a delicate balance...so I ended up with a few ruined potatoes...which became another snack...
Pop them on a cookie sheet and scoop a pile of spice mix on top. Pat it down a bit.
Drizzle olive oil over to the top and bake at 375 degrees for 30 minutes, or until they're a little crunchy on the outside, but still soft inside.
And seriously, if you don't love these things...
...I will come over and eat them all for you.

Hi Amy, question. On one of your pics where they are on the cookie sheet before baking, there is a white chunky looking ingredient. Is that chopped onions? I can see the spice mixture but can’t figure out the white *stuff*…LOL. I couldn’t find onions listed but that sounds good too.
