Most of the time, I just defrost burgers or pop a can of soup, but this week, I decided to be a little more creative and it seriously paid off with this new recipe
Necessity is the mother of invention, right?
Asian Noodles in Peanut Sauce
Ingredients
1/4 box linguini
{would be great with soba noodles too}
1 tblspn olive oil
1/2 of an onion, chopped
2 cloves pre-minced garlic
3/4 cup soy sauce
2 tblspns rice wine vinegar
1 tspn sriaccha
1 tblspn curry powder
1 tblspn ginger
1 cup peanut butter
Approximately 1 cup water
Approximately 1 cup water
Bring some water to a boil and cook your pasta while you're doing the below.
Pour olive oil into a saucepan and add your onions and garlic.
Cook for 2-3 minutes.
Mix in soy sauce and white wine vinegar to incorporate, then stir in spices and sriaccha.
Add peanut butter and stir in as much as possible.
Stir in water to thin out the sauce to a point that you like.
Hopefully your pasta is done by now.
Pour your sauce over the pasta and enjoy!

What a great noodle recipe, I love it! I love making different kinds of noodle dishes, especially on weeknights when I don't have a lot of time to cook. This sounds delicious!
