Chicken, Veggie & Quinoa Curry Bake {Recipe}

This was my first foray into the world of quinoa
{which I thought was pronounced kin-oh-ah and was probably gross until, like, a month ago}
In an attempt to eat a little bit healthier
And this stuff is yum and a half!
Not shockingly, this is based on a recipe from one of my favs, Kalyn's Kitchen and she makes everything delish.


Chicken, Veggie & Quinoa Curry Bake

Ingredients
1/2 cup quinoa 
1 cup chicken broth
1 red bell pepper
1 yellow bell pepper
1 bunch of asparagus
1/4 red onion
2 chicken breasts
1 tblspn macadamia nut oil
{or sub with olive oil}
1 1/4 cup sour cream
1/3 cup mayonnaise
2 tblspns lemon juice
1 tblspn Dijon mustard
2 tblspn curry powder
1 tblspn ginger
1/3 cup parm cheese

Preheat your oven to 350.

First you want to cook your quinoa.  It's kind of like cooking stovetop rice, but not...rinse it first, then combine it with the broth and bring to a boil.  Let it simmer until all of the broth is absorbed, then cover and let it sit for around 5 minutes.


While your quinoa sits, dice up your veggies and cut your chicken into bite sized pieces.

Mix up your sour cream, mayo, lemon juice, mustard, curry, ginger and some salt and pepper to make a seriously yummy sauce.  I love a lot of flavor, but if you think this may be too intense, just mix the curry in a little at a time until it's to your liking.


Throw the chicken in a skillet with the macadamia nut oil and cook it up until there aren't any translucent bits left.


Add the onions and cook for a minute or two.
Then add the asparagus and give it another minute or two.
And finally add the bell peppers for the last minute or two.


Lower the temperature on the stove to low, and stir in the cooked quinoa.


Then, stir in your curry sauce.


Spray a little casserole dish with some non-stick.  Don't forget this part because otherwise you're going to be stuck with some grossness to clean up later. 
Throw in your happy mixture in there, and then top with the parm cheese.

Bake for 15 - 20 minutes and eat that deliciousness right out of the oven!
