Honey Teriyaki Salmon & Veggie Bowl

I think we've discussed this a couple thousand times, but I love salmon
I crave it.  It's so good for you.
I think I would probably eat it five times a week if it wasn't so expensive.
I try to only make it once a week.  So that once a week has to be good.

And when I found this recipe, I knew that it would be totally perfect to spice up and make my own.



Honey Teriyaki Salmon & Veggie Bowl

Ingredients
~1 1/3 lb salmon
3 tblspns oyster sauce
2 tblspns teriyaki
2 tblspns honey
1 tblspn soy sauce + 1 tblspn for veggies
1 tsp sesame oil + 1 tblspn for veggies (optional)
1 tsp chili oil
1 tblspn preminced garlic
1 tblspn ginger
1 red bell pepper
1 1/2 cups snow peas
1/2 an onion
1 cup asparagus
1 cup broccoli
1 tomato
2 cups white rice

Use whatever veggies you have laying around here...feel free to substitute!


First, we're going to whip up a yummy lil sauce.  Mix the oyster sauce, teriyaki, 1 tablespoon soy sauce, chili oil, sesame oil, honey, garlic and ginger together.


Put the salmon in a ziplock and pour about half of the sauce over the top.  Let it marinate in the fridge for half an hour or so.


Cut your veggies up into bite sized pieces and cook your rice.

Preheat the oven to 400, put the salmon in a pyrex, and pop it in the oven for 15 - 20 minutes.


While it's cooking, pour 1 tblspn of sesame oil in a wok or skillet and let it heat up.
Toss your veggies in and cook for a couple of minutes
Then pour the sauce over the top and continue to cook until they're all warm and gooey
If you think you need more saucey-ness, pour the extra tablespoon of soy sauce on top.


Pull out your bowls and layer rice,


Then veggies,


Then a big honkin piece of salmon on top




And enjoy every bite of that salmon filled goodness!
