*Healthy* Buffalo Chicken Roll Recipe

Sooo this recipe is actually supposed to be an appetizer
But it sounded so good that I decided to make it for dinner one night
Not only is it completely delish, but it's actually very healthy at only 100 calories per roll!

We had them for dinner, Hubs had them for leftovers
And then I whipped up a second batch for him from the leftover egg roll wrappers for lunch this week
He came back from work saying that he shared with coworkers and they raved about it
{and that I'm the best wife ever..obvies}
And I'm thinking about doing a slightly less healthy version {read: fried} for an upcoming partay

*Healthy* Buffalo Chicken Rolls

Ingredients
10 egg roll wrappers
1 - 2 chicken breasts
1/2- 2/3 cup hot sauce
1 cup crumbly blue cheese
1 cup cole slaw
{the dry stuff that's by the bagged lettuce...
it took me forever to figure this out in the grocery store}
Blue cheese dressing, for dippin'

First, you need to cook the chicken.
Shred it up, and toss it with that tangy smellin' hot sauce.

Preheat the oven to 400 degrees

If you have enough room, you can lay out your egg roll wrappers and do this assembly line style
I {obviously} do not, so I did them one at a time.
Lay out the wrapper and put some cole slaw on there, towards one corner of the wrapper

Top it with chicken...

And some cheesey cheese.

Fold the bottom up, then the left and right corners in, and rolllllll it up!
Dab your finger in water and rub it along the edge to seal.

And repeat!

Now, pop a cooling rack on top of a baking sheet and you're almost ready to go.
Spray everything down with some nonstick, then put your little rolls on top
Give them a little shower of the spray too, for a little extra moisture.

Pop them in the oven for 12 - 15 minutes, or until they've got a nice golden brown tan.

Pull them out and serve with blue cheese dressing.
And watch your husband melt in admiration of your fantastic {and healthy!} cooking skills.

WIW Anniversary Dinner

I got all fancy pants for the first time in a while to go for our anniversary dinner last week
And although I still wasn't able to eat too much, it was still super lovey dovey relaxingness

Hubby and I sampled some delicious food
Strolled the grounds of the inn where we got married
Cuddled by the fire
And I got to rock my new fav Anthropologie semi-backless sweater

Btw, I bought these pants at the beginning of winter break
And swore I would return them if I got back to my normal weight and they didn't fit by the first of the year
They still fit
And you know what I realized?
They're stretchy.
So they'll continue to fit.

Necklace & Earrings: Charming Charlie, Top: Anthropologie,
Slacks: Banana Republic Outlet, Shoes: Nine West Outlet

Don't you love a good stretchy fancy pant?
You're totally faking it
Because you look all nice and perty
But you're practically wearing leggings

Oh, and Hubby wanted to get in on the outfit post action...
Isn't he devestatingly handsome?
Don't be too jealous.
Shirt: Banana Republic Outlet, Sweater: American Eagle, Slacks: Macy's

Cheers to fabulous anniversary dinners, handsome Hubbies, goofy blog posts and stretchy fancy pants!

Honest

Sometimes, life is hard
Sometimes, I want to run home, crawl under the covers, and hide
Sometimes, I wish I had never grown up
Sometimes, I wonder if I am depressed
Sometimes, I think that maybe my stomach issues are stress related, and thus, really self inflicted
Sometimes, I have nights where I just sit in my apartment and cry

I am not terminally ill
I am not living in a third world country
I have everything that I want
I live in a beautiful neighborhood in a beautiful city
And yet I feel sorry for myself for not reaching my self inflicted goals on my self made timeline...

And then I feel guilty for being such a horrible person

I try to be positive
I try to put it in perspective
I try to move forward with a smile on my face
But then something inside of me sucks me down into a whirlpool of darkness
And I just want to cry again

And then I read something from one of the brave women who are friends from miles away
Like Nina or Lindsay or Hannah
Or especially this guest post on my new favorite Living in Yellow by Lauren that hit really close to home
And I realize that, if nothing else, I'm not alone.
Thank you, to all of you, for being there, inspiring me to write and publish my own therapy
And most of all, for being honest.

Wedding Memories

Last weekend, Hubby and I made very last minute plans to stay over at the inn where we got married as a pre-anniversary celebration
It was a perfectly romantic and relaxing mini-vacation and we loved strolling the grounds and reminiscing
And, of course, taking photos the whole way along...
