But it sounded so good that I decided to make it for dinner one night
Not only is it completely delish, but it's actually very healthy at only 100 calories per roll!
We had them for dinner, Hubs had them for leftovers
And then I whipped up a second batch for him from the leftover egg roll wrappers for lunch this week
He came back from work saying that he shared with coworkers and they raved about it
{and that I'm the best wife ever..obvies}
And I'm thinking about doing a slightly less healthy version {read: fried} for an upcoming partay
*Healthy* Buffalo Chicken Rolls
Ingredients
10 egg roll wrappers
1 - 2 chicken breasts
1/2- 2/3 cup hot sauce
1 cup crumbly blue cheese
1 cup cole slaw

Blue cheese dressing, for dippin'
First, you need to cook the chicken.
Shred it up, and toss it with that tangy smellin' hot sauce.
Preheat the oven to 400 degrees
If you have enough room, you can lay out your egg roll wrappers and do this assembly line style
I {obviously} do not, so I did them one at a time.
Lay out the wrapper and put some cole slaw on there, towards one corner of the wrapper
Top it with chicken...
And some cheesey cheese.
Fold the bottom up, then the left and right corners in, and rolllllll it up!
Dab your finger in water and rub it along the edge to seal.
And repeat!
Now, pop a cooling rack on top of a baking sheet and you're almost ready to go.
Spray everything down with some nonstick, then put your little rolls on top
Give them a little shower of the spray too, for a little extra moisture.
Pop them in the oven for 12 - 15 minutes, or until they've got a nice golden brown tan.
Pull them out and serve with blue cheese dressing.
And watch your husband melt in admiration of your fantastic {and healthy!} cooking skills.

Preheat the oven to 400 degrees
Lay out a wrapper and add cole slaw toward the bottom corner. Top with chicken, then cheese. Fold the bottom corner up, then the left and right corners in, and then roll. Dab your finger in water and rub it along the edge to seal.
Put a cooling rack on top of a baking sheet and spray with nonstick. Add rolls on top and spray them with non-stick as well. Bake for 12 - 15 minutes, or until golden brown.
Serve with blue cheese dressing.
