In This Skin {#EclosBeauty Review & Giveaway!}

I'm a bit of a bad girl when it comes to taking care of my skin
I wash my face in the shower
And remove my makeup at night...sometimes...
But just recently I've started to see more of the dark circles and little creases under my eyes
And the first little signs of wrinkles on my forehead and smile lines
And I realized it was time to get serious

This is me sans makeup pre skin care regimen with wet hair...

It's like that.
But at a cost that fits into my budget.
It was quite the set and included the facial cleanser skin prep, face serum, facial scrub, regenerative cream, eye cream, skin renewal clay mask and even a cute little éclos Terry Cloth Head Band to keep your hair back while you're scrubbing up!

And this is after just a week (still no makeup...but much less afraid to post this one...although I'm not sure where those crazy faces came from...)
My skin is so much smoother, more even and all the little lines are disappearing!


So I went to town with my new yummy smelling skin care regimen
My fav was definitely the eye cream...I looked refreshed and less sleepy after just a few days
And those little bitty wrinkles just disappeared
I was also all about the facial scrub with the little bitty exfoliants that made my skin feel all soft and clean after
My skin just felt overall tighter, smoother, and more healthy after only a week
Hubby even commented that my face felt *soft* when he touched it...which totally melted my heart
And, as a special bonus, I felt like I was having my own spa night with the sweet mud mask!

Now I'm hooked.

Brie Cups {Easy App Recipe}

Ok so I saw this recipe on Pinterest and wanted to try it immediately
Which is pretty much my reaction to anything with brie in it
Unfortunately, after searching through the frozen food section of three different grocery stores, I determined that mini fillo shells are a myth...like the tooth fairy or a chupacabra {yes, I just went there}

So I had to mess with it a little bit.
But it was still awesome
And instead of having little bitty brie bites
I had big, lovely brie cups
That looked lovely on the counter
Until they were immediately inhaled


Brie Cups

Ingredients
1 roll of fillo dough
{there are usually 2 in a pack}
1 wedge of brie
1/2 cup chopped pecans
1/2 cup brown sugar
3 tblspns honey

Grab your muffin tins and let's get going

Roll out your fillo dough and cut it into quarters.


Push a couple of sheets into each muffin space so it forms a little cup


Cut the edges off your brie, then cut it up into little chunks.
Add one chunk to each cup.


Top each brie with a sprinkling of chopped pecans


Then with a coat of brown sugar and a squirt of honey.


Pop them in the oven at 350 degrees for about 10 minutes

Remove, plate, and get 'em while they're hot
Because they're not going to last until they've cooled off
Yummm...my mouth is watering just thinking about these

Remember when I was sick?
That sucked {and luckily went away as mysteriously as it came on..}
But as I was starting to recover, I felt weak
I knew that I wanted to build back some muscle, but I also knew that weights and treadmills were not in my immediate future




So I started doing yoga at lunch time in my building at work {for free! thanks work}
Not only did it help to start to strengthen and stretch my body after months on the couch, but it helped to clear my head too...
Even though I'm a bit of a spaz and usually fell half way through most of the poses

When I got back to normal and went back to the gym, I just couldn't stop
I still go at lunch
And go to power yoga at the gym twice a week
I've tried new and different workouts, but I'm never as sore as the day after a yoga class
I feel strong, graceful, balanced and less stressed than I have in the past
Not only do I love the way that I feel after yoga, but I love how I feel when I'm doing it
And I can't say that for most of my other workouts

Happy Birthday To Hubs

Guys you won't believe this
I'm married to an old man
Seriously ancient


JK Hubs, don't get mad :)
My hottie of a Hubby turns 30 frickin years old today!


And being the party planner that I am, I couldn't pass up this opportunity to throw a bash for my man
So last weekend, we drove up to wine country with a slew of friends
And did nothing but eat, drink and enjoy the kitchy-ness that is Solvang


It was a perfect way to celebrate the most perfect, sweet, caring, thoughtful husband that a girl could ask for.
Happy birthday Hubby.
I love you more than words can express.

Balsamic Roasted Veggies {Easy Healthy Side Recipe}

For some reason, when I have a dinner party, I always feel the needs to make green beans
But usually, I make them in a pot or a pan with butter and brown sugar
And it's always the bane of my existence, because I have to do it at the last minute, when I'd rather be hanging out with my guests

This fabulous recipe from Kalyn's Kitchen {one of my very fav healthy cooking blogs} lets me serve my green beans without any hassle
And they're fantastically, deliciously healthy too!


Balsamic Roasted Veggies

Ingredients
1 package sliced mushrooms
1.5 lbs green beans
1/2 an onion
2 tblspns olive oil
2 tblspns balsamic vinegar
1 tblspn garlic powder
Salt and pepper to taste
2 tblspns parmesan cheese

I used mushrooms, green beans, and onions, but you could really do this with any thinly sliced veggie.  In the future, I may add squash, zucchini, carrots, or other favs.

First, clean and slice all of your veggies.


Then, pop them in a big freezer bag, dump the olive oil, vinegar, garlic powder, salt and pepper on top,
And shake it all up


Throw them in the fridge for 30 minutes to a few hours.
I got everything ready in the morning and didn't have to worry about them.

Turn your oven to 400
Put the veggies in a pyrex
And bake for about 30 minutes.


Top with parm {forgot to do this before I took the pics..sorry!} and eat up!
