You may know this about me already, but I'm a little
weird
I do all of my menu planning a few weeks in advance
And sometimes I run into a recipe on Pinterest that I'm just dying to try, but I don't allow myself to until there's an open space on my menu plan
I was seriously dying to try this
recipe, based off of one from
Pinch of Yum {this girl is talented like woah}, for like three weeks
And it totally lived up to the crazy hype in my head
Cajun Salmon Bowl with Mango Salsa
Ingredients
1 tblspn cumin
1.5 tblpsn curry
2 tsps chili powder
1.5 tblspn Cajun seasoning
1/2 tsp cinnamon
1/2 tsp nutmeg
Dash of salt
1 lb. salmon
1 tsp macadamia nut oil
2 cups white rice
1 - 14 oz can black beans
2 mangos
3/4 red onion
1 red bell pepper
1 avocado
1/2 bunch cilantro
Lime juice
First you get to make your own spice rub! Yum! Mix all of the spices together in a little bowl. If you're me
and you're gross, you're going to stick your finger in and taste how good it is and seriously consider making a whole jar of it to keep and use on a regular basis. This stuff is seriously spicy goodness, guys.
Pop your white rice on the stove and get it cooking. Just prepare the normal way...use a rice cooker or whatever's easiest for you.
Rub the spices all over the salmon. I told you it's delicious. You want as much of that good flavor on there as possible!
Pour the oil in a skillet and throw the salmon on top.
Cook it on both sides, then break it up into little pieces and continue to cook until it's done the whole way through.
Add all of the extra spice mix once you break it up to give it some extra flavor.
Then pull it off the burner and put it aside.
Now you're going to make your own salsa
{I should have told you...you're going to feel like a serious Top Chef extraordinaire by the end of those one}. Chop up the mangos, onion, avocado, and cilantro and toss them together. Spritz them with lime juice and toss with salt to taste.
Drain your beans {but do not rinse} and mix in the cooked white rice. Add some salt, cilantro and lime juice to taste if you want a little chipotle style rice.
Grab your bowls for serving. First, pour in some beans and rice.
Then add your salmon.
And finally, pop some salsa on top!
Serve and gobble that stuff up like you've been waiting a whole month for it
