Cheesy Bruschetta Portabello Mushrooms

I've always enjoyed, but lately I've started to try more gourmet mushrooms and now I'm a touch obsessed
So I bought a couple of portabellos the other day with the intention of trying another Pinterest recipe
And then completely veered off on my own path to make what we're going to call Cheesy Bruschetta  Portabellos

Although mine were slightly burned around the edges {I thought I might have killed them for a second, folks}
They were purely and simply delicious
And they totally rock as a vegetarian entree, but could also be a fun side dish too

Cheesy Bruschetta Portabello Mushrooms

4 large portabello mushrooms
2-3 tblspns olive oil
Salt & pepper
1 can seasoned diced tomatoes
1 tsp garlic powder
1 tsp onion powder
1 tblspn balsamic vinegar
1/2 cup gorgonzola cheese
1-2 tblspns mozzarella cheese

First off, turn your oven all the way up to broil.

Next, you have to clean up those mushrooms.  Pull off the stems and put them aside, and then use a spoon to scoop off the gills.  Ew.  Gills.

Brush the mushrooms with olive oil on both sides, and sprinkle salt and pepper on top.  Put them on a baking sheet and pop them in the heated broiler for about 5 minutes {any more and they'll probably get crispy like mine did}.

While they're heating up, we'll make the filling.
Dice up the stems of the mushrooms that you held aside earlier and put them in a bowl.  Drain and lightly rinse the tomatoes and pop them in too.  Add garlic powder, onion powder, salt, pepper, gorgonzola and balsamic and stir it all up.

Once the mushrooms are hot and toasty, pull them out and reset the oven for 350 degrees.
Fill the mushroom caps with your new yummy bruschetta-y mixture and top with mozzerella.

Pop them back in the oven and cook for 5-10 minutes.

Remove them from the oven and eat them piping hot.

These things were so darn good that my mouth is watering just thinking of them
I may need to make them again next week...

A Makeup Experiment

This post brought to you by Revlon. All opinions are 100% mine.
I usually don't wear a ton of makeup
I'll swipe on some eyeliner, mascara and powder and call it a day
And I realized that I needed a new pop to my look.

So when Revlon wanted me to check out their new line, I jumped at the opportunity
I was so excited to incorporate all of the fun stuff into my own Revlon Expression Experiment
From the makeup primer, which makes you face look perfect and all of the rest of your makeup stay on forever,
To the bold red lipstick, dramatic eye shadow, and fun, flirty orange nail polish.

With just a few fun tweaks to my makeup, I was ready to go
My old drab clothes felt revitalized by the pops of color on my face
And I was excited to go out and show it off.

I never thought I was a red lipstick girl but this gloss changed my mind.  I wore it a ton on my vacation and it instantly brought my whole look from cute to totally faboosh!
I felt beautiful and empowered thanks to Revlon and you can too

Cilantro Butter Scallops {Recipe}

I love scallops
I wish that I could justify having them more than once every 394203984 years
But they cost about a bajillion dollars
{we're exaggerating a little over here today}

So I bought them with the intention of making this deliciousness from Kalyn's Kitchen
And promptly decided that it's not worth making scallops if they're not buttery and fattening
And so I came up with this
And it was perfect.

 Cilantro Butter Scallops

8-10 large scallops
2-3 tblspns butter
1 tblspn preminced garlic
Salt & pepper

Cilantro Salsa
3/4 of a bunch of cilantro
4-5 green onions
1 tspn red wine vinegar
1 tblspn lime juice
1 tblspn olive oil
2 tblspns water
1/2 tspn hot sauce
Salt & pepper

Cilantro Lime Rice
2-3 tblspns lime juice
1/4 of a bunch of cilantro
2 cups cooked white rice
Salt & pepper

Phew.  Ok this one is a little more complicated than most of my recipes, but it's totally worth it.

First, let's make your cilantro salsa topping.  Pull all of the leaves off of the cilantro, chop the green onions into smaller pieces, and pop them into the food processor with all of the rest of the salsa ingredients.  Pulse until combined, then set aside.

Next, put your white rice on to boil.  Chop your cilantro while you're waiting.  When it's cooked and done, add lime juice, cilantro and salt and pepper and mix thoroughly.  Taste and feel free to add more of whatever you feel is necessary to make it taste just like the stuff from Chipotle.  Set aside.

Finally, we're going to cook those yummy scallops.  Melt the butter and garlic in a frying pan and set those puppies in there once it's nice and hot.  Let them cook on one side until they're starting to brown {5-8 minutes} and then flip them over and let them cook on the other side.  Throw some salt and pepper on top of each side while it's cookin.

You're nearing the finish line!
Grab a plate and lay down a bed of rice,
Then some lovely scallops,
Then scoop some scrumptious salsa on top

And voila!
A lovely meal, completely deserving of your uber expensive scallops.
